Brennan Vineyards wine pairings dinner

Brennan LogoAhead of our wine trip in January, we had appointments with a number of vineyards, including Brennan Vineyards. We were excited to meet with Christa, and to spend time with her and the owner, Trellise during our visit. We sampled wines with them and got to hear Trellise’s passion about winemaking, and learned more about the Brennan story. We sampled a variety of wines and they were all excellent. We’re excited to share them with you.

About Brennan Vineyards

“History grows here in Comanche, Texas … The Texas Frontier and modern day wine making meet here at Brennan Vineyards.  Taste 100% Texas, sophisticated wines curated and crafted here at our 1879 homestead.

Brennan Vineyards was founded in 2001 by Dr. Pat and Trellise Brennan. Their love of wine has brought us where we are today. Brennan Vineyards is located at one of the oldest remaining homesteads in Texas with our tasting room in the Historic McCrary House. The Historic McCrary House, located on the property of Brennan Vineyards, was built in 1879 by ‘Mat’ McCrary. Mat McCrary volunteered with the Minute Men Rangers.

At Brennan Vineyards we are committed to ‘authenticity from ground to glass’ and consumer transparency with all of our products. Not only do we get our hands dirty in the alluvial sandy soils of Comanche and the sandy soils over rock in Newburg; but we are pleased to work with fabulous grape growers from all across the state of Texas.  Each of our wines has its own unique history and story. We strive to share that story with you every chance we get.

100% TEXAS
In a day and age where weather can be a winery’s friend or foe, 100% Texas is the epitome of commitment to the Texas Wine Industry as well as the consumer. All Brennan Vineyards”Texas” appellated wines are 100% Texas Fruit, and Texas produced.”

Our presenters: Christa Halliburton, Brennan Vineyards’ General Manager, and Carl Hudson, PhD, CWS

Christa Halliburton has been with Brennan Vineyards since 2014, beginning as a tasting room associate. She steadily moved up the ranks, becoming Brand Ambassador, and is now the General Manager.

“My career had been in the meat industry and the agricultural world but I’d always worked weekends in the service industry as either a server or bartender. In 2012, I discovered Texas had a burgeoning wine industry, and wine became a weekend adventure for me. My first job in the industry was with the Tempranillo and warm climate varietal legend Jim Johnson at Alamosa Cellars in Bend, Texas, as a tasting room associate. When Jim and Karen Johnson retired and closed their tasting room, Jim sent me to Dr. Brennan. Working at Brennan has taken me back to my roots on the family farm, maintaining a 6,000 fruit tree orchard. What do I like about working at Brennan Vineyards? Well, I enjoy a good glass of red, white or rosé crafted in the old world style, but my passion is really in the vineyard, because every good wine starts in the vine.”

Carl Hudson is a native Texan and graduated McMurry University in Abilene with a degree in chemistry, and earned a Ph.D. in organic chemistry from The Univ. of Texas-Austin in 1977. Carl worked as a research scientist in the petroleum industry (LA and NJ) for 30 years, all the while maintaining an interest and participation in wine activities. After a company-initiated move to NJ in 2000, Carl became involved with William Heritage Vineyards of Mullica Hill, NJ, working with the Heritage family for 11 years to convert the family’s peach and apple orchard into a vineyard and top-rated East Coast winery. While in NJ Carl served as wine program director and wine dinner host for friends/owners of a family/fine dining restaurant. He also hosted numerous events for Wm. Heritage Vineyards as well as other private wine dinners. After retirement from ExxonMobil in 2009, Carl immersed himself iin the business of growing grapes and making wine while serving four years as full-time assistant winemaker for Wm. Heritage Vineyards.

Returning to Texas in 2013, Carl re-entered the wine industry and served as Wine Educator for Texas Wine Collective (formerly 4.0 Cellars) in Fredericksburg, TX. Currently he serves in the tasting room, plans and hosts special wine pairing events, writes informational material for staff and helps with customer education. Carl is excited to live in the Hill Country, working in and supporting the vibrant and burgeoning Texas wine industry. He has been active in Texas Wine and Grape Growers Association (TWGGA) and Texas Hill Country Wineries (THCW) and has served several years as an organizing educational committee member and program contributor to both organizations. He also is a contributing writer to the Texas Wine Lover website. Carl continues to be challenged to learn more about wine, earning the coveted Certified Specialist of Wine (CSW) degree from the Society of Wine Educators a few years ago. For his writing efforts, Carl was honored as TWGGA Wine Writer of the Year in 2018.

The evening’s menu

First course:  2022 Brennan Muscat of Alexandria with peach and burrata crostini

About the wine:  With aroma of gardenias, orange blossoms, green melons and sweet hay, the flavor evokes delicate key lime curd, cantaloupe and honeyed cucumbers.  Delicate in every way, it dances across the palate and its slight minerality evades with a hint of a mouthwatering brine.

Second course:  2022 Brennan Field Blend Rosé with mixed greens salad (toasted pecans, dried apples, creamy vinaigrette)

About the wine:  Delicate aromatics of slightly ripe strawberries, rhubarb, and watermelon candies rounded out by hints of violets. Brilliant acidity, clean and crisp mouth feel with flavors of tart red currants, Rainer cherries, and orange zest.

Third course:  2022 Brennan Viognier Reserve Black Label and 2019 Cabernet Barrel Reserve with cream cheese and jalapeño stuffed, bacon wrapped pork tenderloin

About the wine – Viognier: Full-bodied and full of texture, this selection is barrel-aged in neutral French Oak.  Exudes rich aromatics of poached pears, apricots, honeycomb, and sweet hay.  Fruit forward and rich on the palate with nuanced soft vanilla and hits of caramel from oak aging.

About the wine – Cabernet:  Its tannic structure, coupled with its red and black fruit flavors compliment hearty dishes perfectly.

Fourth Course:  2019 Brennan Buffalo Roam Reserve with bison tenderloin, caramelized mushrooms and roasted potatoes

About the wine:  With aroma of dark cherries, blackberry cobbler and a bouquet of mahogany, saddle soap and Mexican vanilla, this blend features Syrah, Cabernet, Petite Sirah and hint of Cab Franc.  With smooth acids and medium tannins, this sultry and sophisticated wine presents dark fruits and luxurious spices.

Fifth course:  Brennan non-vintage barrel blend (Winemaker’s Choice Vol 8) with chocolate and cherry bread pudding

About the wine:  This big red blend is layered with fruit flavors of bright tart cherries, red raspberries, and notes of tricolor pepper – hints of green olives and a calcareous minerality nod to its near-Hill Country fruit origins.
